Food for Thought

My sister who lives in Japan sent me this dressing you can add to sliced bitter melon to make a salad. This must be the purest way to enjoy bitter melon. (Eating it plain wouldn’t be an option for those who do not enjoy endurance challenges.) It contains several different kinds of sugar, wine, and vinegar. Somehow they figured out a way to control the bitterness. I tried it plain and it was super bitter. Thoroughly coating the slices in this dressing dramatically reduced the bitterness. Some food scientists were hard at work.
