Food for Thought

This is by far my favorite Chinese/Taiwanese pastries. (I don’t know if this originated in Taiwan or China.) It’s a pineapple cake. The outside is like short bread, buttery and crumbly. Inside is chewy. I could eat a dozen of these in one session.

You could get commercial, packaged versions of this but they are nowhere as good as freshly baked ones. It’s hard to find them, however, unless you go to Flushing.
