I don’t mean how to cook or eat eggs; I mean how do the chickens produce better tasting eggs?
My friend @victoriareichelt gets excited about orange egg yolks. I did a quick research and found other people claiming the same. They say the deeper the color, the more nutrients it has, and that free-range chickens feeding on bugs and grass produce these deep orange egg yolks. Well, that sounds right but is that really true?
It would be interesting to do a sampling party where each person brings a carton of eggs that he/she thinks is the best. And see if we can taste the difference from commercial eggs.
The one pictured above is farm fresh from Union Square Green Market. It tastes good but I’m not sure if I can tell the difference.
