Fried rice is one of my comfort foods. It’s one of the most common dishes cooked at home in Japan. The Japanese people mentally organize all foods into 3 major categories: washoku (traditional Japanese 和食 ), yōshoku (western cuisines 洋食 ), and chūka (Chinese 中華 ). In terms of popularity, they are split evenly. You might think traditional Japanese cuisine would be the most popular, but that is not the case. Fried rice and ramen are very popular and they fall in the last category.
