The cuisines in America can be grouped into different generations. Some are already in retirement age, like French and Italian. They tend to care more about making money than proving themselves to the world. Some are in middle age, like Japanese and Mexican. Some are essentially the millennials of cuisines, like Taiwanese and Indonesian.
Most of the millennial cuisines started in Queens. These photos are from the Indonesian food festival today in Elmhurst. All the vendors were looking proud of their food. Indonesian cuisine is young and ambitious, that is, in the USA. It has something to prove here.
At school fundraising events too, I’ve noticed that immigrants are the ones who put their passion into their food. The immigrant vibe is youthful regardless of their actual age. You can feel it at events like this. In Queens, every day feels like a multicultural festival.
