Food for Thought

This place is about quality. Simple ingredients prepared simply with a lot of care. I saw the cook wiping off the stray sauce—there must be an industry lingo for this task?—not something you often see at a place primarily for takeout. (Or maybe he sensed that I was about to Instagram his food.) Presumably it’s Caribbean food but because it’s so simple, it does not feel or taste ethnic or foreign; it’s comfort food for everyone.
