Even though I’m not a vegan, I wanted to see what vegan ramen is like. The concept seemed like an impossible proposition. Japanese ramen broth is the mother of all broths; you are supposed to throw in everything but the kitchen sink. I ordered Spicy Mushroom Ramen with Tofu and was impressed. The broth was rich. It’s made from 6 different kinds of mushrooms, seaweed, sesame, and onion. The topping was sort of like mapo tofu. I’ve had their classic one with chicken and pork broth before, but I like this vegan version better. I slurped the whole thing up till the last drop
