Yakisoba is one of my comfort foods. It’s one of the most popular street foods in Japan. Kids like it because it’s sweet. I loved it as a kid too but my parents would make it with more vegetables than noodles. I guess it was their way of feeding me more vegetables, but I remember hating to go through all the vegetables to get to the noodles. It was not exactly yakisoba; it was more like stir fried vegetables that had some noodles mixed in.

The great thing about being a grownup is that I can now cook anything the way I want. Every time I put lots of noodles into yakisoba, I can taste the freedom
